Hawaiian Haystacks

3-4 cooked and diced chicken breasts

2 cans cream of chicken soup

Milk add  enough to make a gravy consistency

Heat in saucepan until warm  add more milk if needed.


Toppings:  Use only the toppings your family likes

Pineapple tidbits(sweetened)

grated cheddar cheese

shredded coconut

sliced mushrooms

chopped green pepper

chopped green onions

Maraschino cherries (no stems)

sliced black olives

diced  fresh tomatoes

crunchy chow mein noodles


Serve over rice, top with chicken gravy(made above) and the toppings of your choice.

Rice Krispy Treats Microwave

Rice Krispy Treats  Microwave 


So nice to be able to make rice krispy treats in the microwave.    Extra marshmallows make these extra yummy.  You will need a larger microwaveable bowl.  Julie's recipe.

1    9X13 buttered dish

3- 10 oz. bags of marshmallows
1 stick of butter
1 12 oz box of Rice Krispies cereal


Put 1 stick of butter sliced in thick chunks and 2 bags of marshmallows in bowl and microwave for 1 minute.  STIR  repeat this step until marshmallows are melted.  Add extra bag of marshmallows and stir. 
Microwave 30 sec more stir.  A few marshmallow chunks make this even yummier.

Add  box of rice krispies stir until coated and press into  buttered 9X13 dish.


PEANUT BUTTER VERSION:  add 1 cup of peanut butter with the first 2 bags of marshmallows and the butter.  Continue recipe.

Crockpot Thai Chicken Curry

 Crockpot Thai  Chicken Curry


1-2 Cups Chicken broth

2-4 T Thai red curry paste

1 T soy sauce

1 T sugar

1 T Minced ginger

3 cloves minced garlic

1 lb chicken breast or thighs,  cut into bite size pieces

1 zucchini,  cut into 1 inch cubes

1 med onion chopped

14 oz can coconut milk

1 large bunch kale or spinach, cut into small pieces


Put all ingredients in crockpot( not kale or coconut milk)   Set crockpot on high for 4 hours.     After 4 hours, stir in coconut milk and kale.   Thicken with flour.

SERVE over rice


More spice?  Add chopped chili peppers.

Garnish   lime, cilantro  optional.

Silver Dollar City Ginger Cookies


 These cookies are amazing.  This recipe is a knock off of the Ginger/Molasses cookies you can buy at Silver Dollar City.


Ingredients:

2 C Flour

1 t. cinnamon

1/2 t. cloves

3/4 c shortening

2 T molasses

1 t baking soda

1 t ginger

1/2 t salt

1 c sugar

1/4 c sugar set aside for rolling cookie

1 large egg

Cream shortening and  sugar.  Add molasses and egg. Mix dry ingredients together and  slowly mix with wet ingredients. Shape into balls( med ice cream scoop and roll in the 1/4 c of sugar, then slightly flatten.  Bake 12 cookies on a parchment lined  cookie sheet.  Bake 350 degrees for 15 minutes.  These are thick cookies and so delicious.

Baked Oatmeal

 Baked Oatmeal


Ingredients:

2 C Old Fashioned Oatmeal

1/2 c brown sugar

1/4 c chopped nuts

1/3 c dried fruit

1 t baking powder

1 1/2 c milk

1/2 c unsweetened applesauce

2 T melted butter

1 egg

Preheat 375 degrees.  Stir wet ingredients, Add dry ingredients.  Spray 9X9 square baking dish with cooking spray.  Pour oatmeal batter in.  Bake 20 minutes.

Indian Butter Chicken

 Ingredients:

Pan fry chicken and cube. 


Saute: 1/2  chopped onion in 1 cube butter with

2 cloves minced garlic until tender.


Sauce:

2 cans  14.5 oz crushed tomatoes

1 can  12. oz  mild Rotel tomatoes

6 oz tomato paste

1/2 c brown sugar

1 T Garam Masala

1 t curry

1 t tumeric

1/2 t  cumin (optional)

1/2 t ginger

2 t lemon juice

1/2 c chopped cilantro(optional)

1/2 t black pepper

Salt to taste


Blend onions, garlic and butter with  the sauce in a blender until smooth. 

Return to pan  and add cubed chicken and let simmer about 20 min on low.    Add 1 cup or more of heavy cream before serving.  Serve over rice.  When starting your rice you can add 1/2 t fennel.  When rice is cooked, fluff rice and add add slivered carrots,  and peas.  Serves 6-8  Serve with Naan, Pakora  and or Vegetable Korma.

Corn Chowder with Sausage


Ingredients


 1 1/2 c butter

1 1/2 c flour

8 c milk

6 cubed potatoes

4 stalks celery chopped

4 shredded carrots

2 c corn 

1 onion chopped

1 lb. browned and drained pork sausage

salt and pepper to taste



Boil vegetables 10-15 minutes until potatoes are tender.  Drain water off vegetables.   Make a white sauce with the butter, flour then add milk. Add to whte sauce. Add corn and sausage.  Salt and pepper to taste.  Thin with milk if needed. Serve with Chew Bread.
