Buffalo Chicken Bleu Cheese Meatloaf

The main selling point of this meatloaf is that it is high in protein and low in fat. Only 275 calories for  2 slices. Perfect for fat loss and muscle building. Not to mention, it is actually good! This is a biggest loser cookbook recipe.

I don't really like meatloaf, but throw some Franks wing sauce on anything and I'll probably try it.



Buffalo Chicken Bleu Cheese Meatloaf  

Ingredients:
Olive Oil Spray   
2/3 cup Old-Fashioned Oats   
1/2 cup Fat Free Milk   
2 1/2 tbsp Buffalo Wing Sauce (or more to taste) **
1 pound ground Chicken or Turkey  
1/2 cup Finely Chopped Celery   
1/4 cup Shredded Carrots   
1/4 cup Finely Chopped Sweet Onions   
2 lg Egg Whites (lightly beaten)   
1/4 tsp salt   
2 oz Crumbled reduced-fat Blue Cheese (I used Big Bleu by Bolthouse, cause it's what I had)
Directions:
Preheat oven to 350 degrees. Lightly mist 9x5 loaf pan with olive oil spray.

Combine oats and milk in medium mixing bowl and stir to mix. Let stand for 3 minutes, or until the oats begin to soften. Stir in the wing sauce until well mixed. Add the chicken, celery, carrot, onion, egg whites and salt. With fork or clean hands, mix the ingredients well. Add the blue cheese and gently mix to combine.

Transfer mixture to prepared pan and spread so that the top is flat. Bake for 35 to 40 minutes, or until the chicken is completely cooked through and no longer pink. - My meatloaf had some standing liquid on it so I cooked it for about 45 min than pulled it out. It is really moist and will fall apart if you don't let it sit. The liquid will go away after sitting for awhile too :)

Cut into 8 slices and serve immediately.


 **We used 4 tablespoons of wing sauce cause we like it spicy! And that was about perfect for the typical wing flavor. But to keep it extra mild I'd do 2 tablespoons.

  1. I would like this! Unfortunately, most of my family thinks mild salsa is too spicy, I will have to postpone making this until my whole family is out of town and I am cooking for myself :) Or... You can have me over and let me try some of yours! :) Nice pic too!
